Steamed Green Beans with Slivered Almonds

I love this simple dairy free side dish year round. This was actually the first recipe that we replaced our typical green bean casserole with 6 years ago. It's inexpensive, light and full of minerals. I don't remember where I got the original recipe from. And we're actually having Brussels sprouts instead this Thanksgiving. Enjoy.

Steamed Green Beans and Slivered Almonds

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients (8-10 servings)

  • 2 pounds fresh green beans, trimmed and halved if desired
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup slivered almonds
  • 1 tablespoon non dairy butter
  • Squeeze fresh lemon juice
  • salt and freshly ground pepper, to taste

Instructions

Steam the green beans until tender, about 10 to 15 minutes.

Heat the oil in a saute pan and add the almond slivers. Saute over medium heat until lightly browned. about 2 minutes.

Add the green beans and non dairy butter.

Turn of the heat and give it a squeeze of lemon juice.

Toss together and season to taste with salt and pepper.

*could also glaze with balsamic vinegar instead of salt.
