Peaches?!? In Vegas?!? Yes, we can! Our desert peaches are smaller and not as juicy as a southern variety. But we can grow them and they're tasty. AND as I pointed out before, you should look around and see if they're growing in an abandoned yard near you.
Of course there is a story to go along with my BOXES of peaches.
A couple of Sundays ago, a woman in our church stood up and told everyone that she had brought a small box of peaches and that everyone should take some. Of course I went to check out the goods and jumped her with questions. She told me that NO ONE had asked her about the peaches and that she had boxes of them at home and didn't know what to do with them. SERIOUSLY!! Of course, I wanted them. You should have seen the offspring light up when they heard.
The next day we went to her home and she showed us the dwarf (dwarf!!) tree that had produced hundreds of good sized peaches. No spray, no truckin to Vegas, oh yeah!!!
I got to use some with my Summer Nutrition Series kids, we kept some for ourselves, and the rest we froze and gave back to her.
My home smelled divine during the 5 days it took us to work with so many peaches.
I don't know what the fascination is with the frozen peaches, my kids kept eating them before I could bag them.
And right out of our Vitamix cookbook:
Peach Mango Smoothie
- 1 cup water
- 1/2 cup frozen mango
- 1 medium peach,halved and pitted, frozen, skin on
- 2 pitted dates or 1 tablespoon honey
Blend until smooth. Add more water if you would like a thinner consistency or ice if you want it thicker.
So simple and so very good!! We got 3 hearty smoothies when we doubled the recipe.
Local, seasonal, kid made and approved. The color is amazing and the flavor is fresh!
